Carribean and Tropical: Coconut Kerry Chicken (Dutch Antilles)

Ingredients
• 1 Lime Lime Juice
• 4 Medium Chicken Breast
• 1/2 Teaspoon Salt
• 1/2 Teaspoon Pepper
• 1 Teaspoon Annatto Oil
• 2 Tablespoons Water
• 1 Medium Onion -- Chopped
• 1 Bunch Scallion -- Chopped
• 3 Cloves Garlic -- Chopped
• 1 Tablespoon Curry Powder
• 1 Can Tomatoes -- Diced
• 1/2 Cup Lite Coconut Milk
• 1/2 Cup Chicken Broth
• 2 Cups Rice -- Cooked
Directions:
Squeeze lime juice over chicken. Rub with salt and pepper. Brown chicken in oil until well browned on all sides. Remove and set aside. Add water, onions, scallions, garlic, and curry powder to pan. Simmer for 10 minutes. Add tomatoes, coconut milk and broth. Bring to a fast simmer. Return chicken to pan, cover and simmer for 15 minutes. Serve over rice.
